Doing surprisingly well!

Day 3 of the 1000 Calorie Challenge today, which means it’s low-cal, low-carb day. This requires quite a bit more planning than moderate-cal, moderate-carb day but got off to a bad start by having a late night (had work to do), and not preparing in advance.

Threw a bunch of things into my cooler bag, and hoped for the best. As it happens, worked out quite well, although I ended up having smoked mackerel for breakfast! It was yum actually. And my mid-afternoon snack of smoked turkey and avocado, turned into smoked turkey and…smoked turkey, as I was in transit and didn’t have anything to slice the avocado with.

A couple of temptations today – not least the massive coffee cake hubby baked for my team meeting today and that I carried all the way there. But I wisely allocated cake-duty to a colleague, let the starving minions polish the lot off, and then asked somebody to clean the plate so I wasn’t tempted by crumbs! The lengths we go to.

And I also found myself with a 30 minute wait at a train station as I missed my train by about 30 seconds. I was starving, and there was nothing suitable to eat. It was close, but I opted for a Diet Coke to satisfy my taste buds, and more raw veggies that I’d forgotten I had in my bag.

I can’t actually believe I’m doing so well.

Hubby came up trumps and put this delicious concoction on the table when I got home: spicy tilapia with oven-roasted left over veggies – asparagus, bean, and cherry tomatoes plus bit of butter to make up my fat allowance (missed out on that avocado earlier). A quick calculation on my online food diary showed I was still way too low on fat, and the tilapia was way too high on protein, so half went in the fridge for tomorrow, the avocado made another appearance – a nice creamy cooling texture with the spicy stuff. What a star! I’d be lost without him. So for those of you without a BBG hubby to help you, you poor souls, here is the recipe for this delicious and simple Cajun Tilapia dinner. And while I’m at it, have another one for the delicious Venison and Creamy Mushroom Sauce he cooked up for me the other night.

Also did my second workout of the week today. Was very tough, but managed to increase the reps on Monday’s. Not looking forward to Friday: reduce the rest and add a set to everything! That man is a sadist!!!

    Yay! And good job!

    Funny about the mackerel for breakfast… but I’ve done fish for breakfast before myself. When you are hungry… I find it really doesn’t matter what you eat when!
